We have a some great Thanksgiving themed  ‘Cooking With Beer’ Blog posts to share. First up, Fresh Boysen Cranberry Sauce


You’d think using sour beer with tart cranberries would make this sauce too tart but the fruity, earthy and tart flavors of our Fresh Boysen Golden Foeder Beer make a well-rounded, complex sauce that would be a perfect accompaniment to turkey (especially a heritage bird); duck, goose, or even an rich mushroom tart.  And there’s plenty of beer left to pour yourself a glass to sip while you cook!

Beer pairing note: Fresh Boysen is also lovely paired alongside any rich meal; much like cranberry sauce itself,  the mouthwatering acidity provides a counterpoint rich holiday fare.  


Makes about 2 cups.

 

Recipe

1 bag fresh cranberries, rinsed and picked through to remove stems and leaves

1 cup sugar

â…“ cup dried cranberries

1 cup Springdale Fresh Boysen

 

Method

Combine and simmer on low heat for 30- 40 minutes, until the liquid reduces by half and begins to thicken.  If you don’t stir it too much you will get a nice sauce full of whole cranberries and a ruby-red sauce that will thicken once cooled.
