Boozy Brig Cookies
- 1Â can Brig Mocha Stout
- 1 cup salted butter
- 1 ¼ cups light brown sugar
- 2Â eggs
- 1 tsp baking soda
- 2 cups flour
- 1 ½ cups old fashioned oats
- Couple handfuls crushed pretzels (about 1 cup)
- Couple handfuls dark chocolate chips (about 1 cup)
- Crack open a Brig Mocha Stout and pour into a saucepan!
- Reduce beer in saucepan over high/medium heat for about 30 minutes. There should be ¼ to ½ a cup left and it should become a molasses like consistency after being removed from the heat and allowed to cool
- Cream butter and brown sugar until light and fluffy
- Mix in eggs and reduced mocha stout
- Add baking soda, flour, and oats
- Add in pretzels and chocolate chips
- Let dough chill at least 30 minutes
- Preheat oven to 350 degrees
- Drop tablespoon sized cookies onto parchment lined baking sheet and press tops down gently to flatten
- Bake 9-10 minutes until barely golden around the edges
- Cool cookies. Top with frosting and pretzel twist if desired or enjoy plain!
Brig Frosting
- 1/2 cup heavy cream
- 2 Tbsp butter
- 3/4 cup dark chocolate chips
- 2 tablespoons Brig Mocha Stout
- Pretzel twists for garnish if desired
- In small saucepan, heat butter and heavy cream over medium heat until just boiling
- Quickly stir in chocolate chips until smooth and remove from heat
- Crack open another Brig! Add 2 tablespoons of mocha stout and stir
- Chill frosting until it is a spreadable consistency
- Frost cookies and press on a pretzel twist
