Our Brig Mocha Stout is a delicious treat on it’s own, but we love baking with it too! Check out our latest recipe for Boozy Brig cookies, you won’t be disappointed!

Boozy Brig Cookies

  • 1 can Brig Mocha Stout
  • 1 cup salted butter
  • 1 ¼ cups light brown sugar
  • 2 eggs
  • 1 tsp baking soda
  • 2 cups flour
  • 1 ½ cups old fashioned oats
  • Couple handfuls crushed pretzels (about 1 cup)
  • Couple handfuls dark chocolate chips (about 1 cup)
  1. Crack open a Brig Mocha Stout and pour into a saucepan!
  2. Reduce beer in saucepan over high/medium heat for about 30 minutes. There should be ¼ to ½ a cup left and it should become a molasses like consistency after being removed from the heat and allowed to cool
  3. Cream butter and brown sugar until light and fluffy
  4. Mix in eggs and reduced mocha stout
  5. Add baking soda, flour, and oats
  6. Add in pretzels and chocolate chips
  7. Let dough chill at least 30 minutes
  8. Preheat oven to 350 degrees
  9. Drop tablespoon sized cookies onto parchment lined baking sheet and press tops down gently to flatten
  10. Bake 9-10 minutes until barely golden around the edges
  11. Cool cookies. Top with frosting and pretzel twist if desired or enjoy plain!

Brig Frosting

  • 1/2 cup heavy cream
  • 2 Tbsp butter
  • 3/4 cup dark chocolate chips
  • 2 tablespoons Brig Mocha Stout
  • Pretzel twists for garnish if desired
  1. In small saucepan, heat butter and heavy cream over medium heat until just boiling
  2. Quickly stir in chocolate chips until smooth and remove from heat
  3. Crack open another Brig! Add 2 tablespoons of mocha stout and stir
  4. Chill frosting until it is a spreadable consistency
  5. Frost cookies and press on a pretzel twist
